If I could compare the taste of shortbread cookies, it’ll be like heaven on earth. I promise that after you made this, you’ll never want to stop eating it. Today, I’ll be sharing with you the best shortbread cookie recipe that you ever had in your life! The following ingredients that you’ll need are:
– 10 tbsp (142g) of Unsalted Butter, at room temperature
– 1/2 cup (120ml) of Confectioner’s Sugar
– 1/2 tsp (2.5ml) of Vanilla Essence
– 1 1/2 cups (360ml) / (180g) of All-Purpose Flour
– 1/2 tsp (2.5ml) of Salt
In a mixing bowl, throw in your butter and salt and start mixing. While you’re busy mixing, throw in your confectioner’s sugar and mix it until it gets nice light and fluffy. Add your vanilla to your mixture. At this point, the texture should be like buttercream. Add your flour little by little, mixing it thoroughly so that there are no lumps at the end and you’ll end up with a dough.
On a clean surface, place your dough on a plastic wrap and shape it into a rectangular prism. Place it in the refrigerator for about an hour or until it gets hard. After an hour, remove the dough from the fridge and place it on a floured surface. Start molding the dough in your hands so that there won’t be any cracks when you start cutting the dough. Form the dough into a brick-like shape and then put it back in the refrigerator for 30 minutes.
Once your dough has chilled for 30 minutes, start cutting the dough into squares about an inch thick. Get yourself a baking tray and layout a baking sheet on top, once that is done start placing your cut-up dough on the baking sheet. Make sure you leave enough spaces in between. Place your tray with your dough in the oven and bake at 177*C (350*F) for 10 minutes but flip them around halfway through.
